Absolutely loving all the fresh blueberries in Australia at the moment. You’ll be seeing lots more breakfast preps and snacks with berries.

🫐 Blueberry granola bars 🫐

Ingredients –
▫️2 cups oat flour (use food processor with 2 cups of oats)
▫️ 1 1/2 cups mixed seeds/grains/nuts/oats of choice
▫️ 1/3 cup honey
▫️ small banana mashed
▫️ 1 tsp vanilla extract
▫️ 2 tsp cinnamon

▫️ 2 1/2 cups blueberries
▫️ zest and juice of 1 lemon
▫️ 3 tbsp chia seeds

Method –
▫️ start chia jam by mixing blueberries, lemon and chia seeds in a pot over low heat. Leave until thickens
▫️ mix flour, grains mix, honey, vanilla and cinnamon in a bowl
▫️ spread 3/4 granola mix at the bottom of an oven safe container. Push down well.
▫️ spread chia jam on top of granola mix.
▫️ top with remainder of granola.
▫️ bake for 20min 180°C
