Fritters are perfect for freezing for a quick meal. I love these because usually I don’t have a lot of time at night to cook and prep dinner. I can put a couple of these into the air fryer to reheat, get my stuff sorted for the next day, and then sit down to enjoy dinner 10 minutes later (without doing anything).

🥦 🌽 Broccoli, Corn and Halloumi Fritters, served with a lemon and whole grain mustard yoghurt sauce 🌽🥦

Ingredients –
▫️ 1/2 head broccoli (in florets)
▫️ 75g (1/2 cup) wholemeal self raising flour
▫️ 80ml (1/3 cup) milk of choice
▫️ 300g corn kernels
▫️ 100g halloumi (crumbled)
▫️ juice and rind of 1 lemon
▫️ 1 egg
▫️ S&P to taste
▫️ spices (optional) – I used garlic, onion, rosemary and oregano.

Method –
▫️if you prefer a smoother fritter – process all ingredients together in food processor.
▫️ if you prefer a chunkier fritter – stir all ingredients until well combined.
▫️ roll mixture into golf sized balls then form into a fritter shape. Fry in pan for approx. 5 minutes (or until browned), flip and repeat for all fritters.
▫️ serve with a high protein sauce and some lemon.

Sauce ingredients –
▫️ 1/2 cup chobaniau plain yoghurt
▫️ 1 tbsp tahini
▫️ 2 tsp whole grain mustard
▫️ juice of 1 lemon
▫️ 1 clove garlic (crushed)
▫️ S&P to taste
