In love with the softness of these mini m&m cookies. I’ve given them out to a few people this last week as a bit of a lockdown treat and have had some really good feedback!
Try out the recipe –
▫️ 1 1/2 cups flour
▫️ 2 tsp baking powder
▫️ 1/4 tsp salt
▫️ 1/2 cup butter or nuttelex
▫️ 1 large egg
▫️ 1/2 cup white sugar
▫️ 1/3 cup brown sugar
▫️ 1 tsp vanilla extract
▫️ 1 tsp almond extract
▫️ 1 cup mini m&m’s (or any mix ins you like)
▫️ whisk flour, baking powder, salt in one bowl.
▫️ in another bowl, beat egg and sugars until light and fluffy. Slowly add flour mixture and combine.
▫️ fold in 3/4 of the mini m&m’s into dough.
▫️ (for thick cookies) scoop approx 2 tbsp of dough and form ball.
▫️ (for thin cookies) scoop approx 1 heaped tbsp of dough and form ball.
▫️ place balls on baking tray. Don’t overcrowd. They will flatten as they cook. Softly press the remainder of M&M’s onto the top of the balls.
▫️ bake for 8-12 minutes (depending on thickness and whether you prefer soft/hard cookie) 175°C
