🥕 MEAL PREP 🥕

I’ve been struggling to finish my lunches while we’ve been in lockdown so I’m trying something different with my prep. Usually my meals are your stereotypical “meal”, but seeing the food in front of me as one meal has been very intimidating for me lately. Largely because of stress.

This week I decided to break my meal up into 2 components that can be eaten together or separately. One that you would usually see in a meal, and the other is more “snacky”.

But there are no rules around meal prep and you have to do what suits you and what is best for you and your lifestyle.

I’m hoping the change to a more “snacky” type meal prep that can be eaten cold will help me finish it ✌🏻

So, what’s in it?
▫️ raw carrot
▫️ cucumber
▫️ Roma tomatoes
▫️ roast sweet potato
▫️ roast butternut pumpkin (squash)
▫️ teriyaki tofu

If I’m feeling hungrier on any given day, I will pair the cucumber and carrot with some hummus.
