Pumpkin in Halloween season is definitely not as big a thing in Australia as it is in the northern hemisphere, but I thought I would jump on the train and make this deliciously cosy pumpkin pasta sauce.

For a protein source, I added red lentils (after soaking). As someone who doesnโ€™t eat a lot of animal proteins, I have to find creative ways to get my intake in day-to-day. Adding lentils to pasta sauces is super easy and doesnโ€™t change the flavour.

๐Ÿ Pumpkin and Sage pasta sauce ๐Ÿ

โ–ซ๏ธ butternut pumpkin (roasted)
โ–ซ๏ธ onion (caramelised)
โ–ซ๏ธ cashews
โ–ซ๏ธ red lentils
โ–ซ๏ธ sage (half fresh, half pre-crisped on pan)
โ–ซ๏ธ garlic
โ–ซ๏ธ salt and pepper
โ–ซ๏ธ water (until desired texture).
