So I had baba ganoush at a restaurant earlier this year and have been so obsessed with it ever since. So, I decided to try and make my own!

I had it with homemade flatbread and it made such a good snack 🤩

Give it a try!

Ingredients –
• 1 medium eggplant (roasted).
• 1/2 lemon juice & rind.
• 1 tbsp tahini.
• 1 tsp smoked paprika.
• 1/2 tsp cumin.
• 1/4 cup extra virgin olive oil.
• 1-2 cloves garlic
• salt & pepper (to taste).

Tips for roasting eggplant? After cutting, salt the flesh and leave for 5 minutes. This allows the moisture to release which will enhance the roasted flavour and give it a better texture when cooked. Remove the moisture with a paper towel and then roast for 30-40 minutes (depending on size) or until the skin starts collapsing. Then blend all ingredients together and enjoy 😊
