Spooky Halloween cookies 👻🍪

I was inspired by thesimplesprinkle to make some Halloween cookies. These are absolutely delicious and soft, and have a lovely marshmallow topping as something different to traditional icing.

Ingredients –
• 110g butter (or nuttelex)
• 100g white sugar
• 80g brown sugar
• 1 tbsp coconut oil
• 1 tbsp almond extract
• 1/4 cup milk (I used almondbreezeaus)
• 3 tbsp cacao powder
• 2 tsp cornstarch
• 180g flour (I used vettapasta protein flour)
• 1 1/2 tsp baking powder
• 1 tsp baking soda
• 1/4 cup dark choc chips
• 2 jumbo marshmallows
• Candy eyes

Method –
• Beat butter and sugars until light and fluffy. Add oil, milk and extract and beat again.
• In a separate bowl combine cornstarch, cacao powder, baking soda, baking powder and flour.
• Add dry mixture to wet mixture and mix well.
• Fold choc chips into the mixture.
• Scoop out tbsp sized balls and spread apart on baking tray. Lightly flatten with your finger/fork.
• Bake for 12min 180. Once removed, let them cool completely on a rack.
• Place marshmallows and a little water in microwave for 30 seconds (check and stir halfway through).
• Place melted marshmallows into pipping bag and decorate as you wish.
• (my favourite part) add googly eyes – works well when marshmallows are still hot and will stick to the cookie when the marshmallow cools
