Surely everything tastes better in muffin form, right? Right!
Check out these lasagne muffins, inspired by lady.lolas.
Super tasty as a well rounded dinner served with some salad, or as a balanced snack. Plus, they can be stored in an airtight container and frozen very easily! If that’s not a win, I don’t know what is!
▫️ make your lasagne meat/“meat” filling. I used turkey mince and lentils as I don’t eat red meat, but it can easily be subbed out for the more classic lasagne filling of lean beef mince. I also bulk mine up with plenty of veggies.
▫️ partly boil the lasagne sheets until just before al Dante (mine took about 6 minutes). If they’re still hard, it makes it difficult to form them into the muffin shape.
▫️ in a well greased muffin pan, add the sheet. I used a cup with some rice to hold them in place for a couple of minutes while they formed shape.
▫️ add the meat filling, then top with cheese.
▫️ bake for 12-15min 180°C or until the cheese is golden.
